Subject:     Design of a Commercial-Scale Continuous Process

For Cajun Seafood Gumbo Food Dish

The Gormet Food Division of our company has just purchased a 200-year old Cajun seafood gumbo gormet recipe from the estate of a renown Louisiana family known for its history of hosting social gatherings where its gumbo is the highlight of the evening.  The Cajun seafood gumbo is a delicate balance between spices (hotness) and subtle flavors.  Some of the flavors are released only by cooking some of the ingredients in hot oil for a period of time.

Your project assignment is to develop a continuous flow reactor system that would produce 5 gal/h of the gormet quality seafood gumbo.  Prepare a flow sheet of the entire operation. Briefly discuss the procedure.  List any constraints for the individual process units in your flowsheet.

Outline any experiments that would be needed to ensure success of the project.  The family recipe for producing 10 quarts (to serve 40 people) via a batch operation is appended and is, of course, to be treated as CONFIDENTIAL.

As usual you should consider and briefly discuss cost, health concerns, reliability, etc.  A complete sample Mini Design Process with important considerations and expectations is available on our Website.
